Healthy Bananna bread

Ingredients

 2 cups whole wheat flour 

1 teaspoon baking soda 

1/4 teaspoon salt 

1/2 cup unsweetened applesauce 

3/4 cup honey 

2 eggs, beaten (or use flax seed and water in place of eggs) 

3 mashed overripe bananas 

Directions Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Apple Crisp

2 cups granny smith apples diced
1/2 C walnuts broken into piences
1 C rolled oats
1/2 cup golden raisins
4 T coconut oil
4 tsp agave or honey
1 tsp. cinnamon
1 tea salt

set apples aside.  MIx rest of ingredients together. Put over top of apples and eat right away :)

Lime Mousse

1 1/2 avacados
1/2 C agave or honey
1/2 cup lime juice
zest of 2 limes
1/2 tsp salt
Process in food processor until whipped. Serve immediately!

Oatmeal Chocolate Chip Cookies

2 Cups Oatmeal
1 cup shredded coconut
1/2 cup soaked walnuts
1/2 cup gogi berries
1/2 -1 cup cacao nibs
1 cup coconut oil
1/2 cup agave or honey
1 T. vanilla
pinch slat
pinch cayenne
MIx dry ingredients together until well combined, then add wet ingredients.  Form into cookie shapes or scoop into a mini muffin tin.  keeps well in the freezer.  :)

Chocolate Peppermint Fudge

1 C cocoa powder (either Cacao or something 100%)
1 C agave
1/2 C coconut oil
1/3 C chopped walnuts
a few drops of peppermint essential oil (I use dOTERRA oils)

put all ingredients in a food processor and process until smooth.  Scrape into a wax paper lined pan.  Freeze for at least 2 hours.  Cut into squares and serve.  Store in the freezer.

Olive and sun dried tomoato tapenade

1 cup olives (mixed in a  food processor)
1/4 cup sun dried tomatoes
3 T olive oil
pt all ingredients into the food processor and blend, then serve on a platter with romaine hearts (the inner crisp small, light green leaves of romaine lettuce. 

Lime agave dressing

1/2 cup lime juice
1/2 cup olive oil
3 T agave
1/2 tsp salt
whisk together and serve.  this is best over frozen berries and spinach leaves. YOu can add walnuts too!  Yummy!

vegetable marinade

1/2 cup olive oil
1/2 c braggs (replacement for soy sauce) you can buy it at good earth
1/8 cup sesame oil
1/2 orange (juiced)
1.4 C agave or honey
1 med clove garlic minced
1/2" peice of ginger, minced. 
Combine everything and pour over cut up veges.  Broccoli and tomatoes it delicious with this!

Apple corn Lettuce wraps

1 cucumber, cubed
2 tomoatoes, diced
2 cups corn
1 avacodo diced
1 apple diced
1 green pepper diced
2 green onions diced
1/2 lemon (juiced)
1 tsp paprika
1/tsp salt
1 tsp cumin
mix all ingredients together and  serve on romaine lettuce

Pineapple salsa

2 cups pineapple (crushed up)
2 med cloved minced garlic
2 sprigs fresh mint, stems remonced nad minced
2 T fresh lime juice
1/4 tea salt
1/2 tsp cumin
1/8 tea cayenne
mix all together and enjoy!  Its yummy with celery , but you can use chips or crackers too if you like.  :)

Creamy Spicy noodles

Creamy Spicy Noodles
chili power almonds 1/2 cup almonds chopped, drizzle of agave, 1 tsp chili powder, 1/4 tea salt. 

cream sauce 
1 C soaked raw cashews, 4 inch knob on ginger, 1 tsp chili powder, and juice of 1/2 a lime. 

Vege noodles 8 cups of any vege that you can cut- I put carrots, zucchini, and cucumbers. 
Top it off with lime and cashews..

Raw Lasagna

Photo: There's no better way to follow up with a marinara recipe than with a FullyRaw Lasagna Recipe! I hope you're ready for a big lunch because this low-fat deep-dish is on the menu! If you haven't already, you MUST give this one a try! Kristina Carrillo-Bucaram Rawfully Organic Co-op 

This recipe is created in layers. Please feel free to be as creative as you would like. There is no wrong way to make this lasagna. 

Ingredients:
5 Large Zucchinis
Cherry Tomaotes Aprrox 2 Pints (Separate from the amount for the Epic Raw Marinara)
    Bunch Italian Parsley
    Bunch Cilantro
    Bunch Arugula
    Bunch Spinach
    Quarter cup Pine Nuts (less if desired!)
    1 Small Green Onion
    1 Small Garlic Clove (Optional)

Directions:

To make the zucchini layers, you will need a mandolin slicer or handheld mandolin. This slices the zucchini into long strips so that you can use them to separate your layers. Use approximately 4 zucchinis for your layers  and hold onto one for your pine nut dressing/"cheese."

After you lay your first layer into your deep dish, you will need a food processor to finely cut/chop a mix of the parsley, cilantro, and spinach. If you want to add the arugula and green onion in here you can as well, but I do those as another layer closer to the top of the spread. After you put them in the food processor, these pieces of greens become so tiny that you can literally sprinkle them on top of the zucchini shreds. Green snow! ;)

If you want to use a few of the spinach or arugula leaves as bedding also between the zucchini layers, you are welcome to do so!

On top of the herbacious spread of "green snow" you will now make the Epic Raw Marinara and spread that on top. Please Note: I did something different than just pouring my marinara onto the lasagna. I didn't want it to become watery, so I strained the epic raw marinara dressing to make it thicker. This worked fabulously! It may take some shaking with a strainer, but it will strain. Drink the yummy tomato juice afterwards!

Family reunion weekend!

It's been a few days since I have been here..  I have been at my family reunion for the weekend.  This was super difficult due to eating all raw foods.   I do have to say my family was really supportive of me and I really appreciated it.  The hardest time must have been when they had pot luck bacon and potatoes, BBQ chicken and peach cobbler.  I planned ahead by making some yummy raw almond joy treats and bought some raw meals at Gingers cafe in Springville, Utah.  

I was surprised that many of my siblings tried the raw treats and actually liked them..  :)
This showed me that all things are possible!
Eating raw food has helped me heal emotionally and I feel so much better than I did in the past.
So onward with the journey...  today is day 17!

Although I have not lost any weight so far I have lost inches.  I revived a compliment today "you look smaller"... this made my day!  

I went to dinner tonight with my son to a local Mexican restaurant casa veda I believe its called.  I struggled with not eating the chips and salsa and chips with the tropical guacamole, however they were super nice and prepared me a low temp fajita with onions, peppers and pineapple that was divine and considered raw due to the temperature..  It was Delicious!  So thankful for everyone's support!

day 11/ 30 raw

ok I will admit it, today was a little difficult.  I keep seeing fabulous recipes on facebook and craving more salty foods.  Guess I better get out the dehydrator and make some raw  kale chips, crackers something..
I know it will be worth it.
I have received compliments on my skin, and "have you lost weight?"  no actually haven't lost a pound; but have lost inches and feeling good. :)
I am really craving pancakes..  so I am on the search for any "raw pancakes"...  looking at shantelles recipe I Posted here..  will see what else I can find...  to put my raw strawberry jam on..

Wendys chili recipe.. vegan style!

Ingredients

1 quart tomato juice
1 (29-ounce) can tomato purée
1 (15-ounce) can red kidney beans, drained
1 (15-ounce) can pinto beans, drained
1 medium-large onion, chopped (about 1 1/2 cups)
1/2 cup diced celery
1/4 cup diced green bell pepper
1/4 cup chili powder (use less for milder chili)
1 teaspoon ground cumin (use more for real flavor)
1 1/2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/2 teaspoon sugar
1/8 teaspoon cayenne pepper

Instructions

In a large skillet, brown the ground beef. Drain off the fat. Put the beef and the remaining ingredients in a 6-quart pot. Cover the pot and let the chili simmer for 1 to 1 1/2 hours, stirring every 15 minutes. You can also cook this in a slow cooker on low for 3 to 4 hours.

Busy day in the kitchen... recipes included for Raw Bit O honey, raw Almond joys and the chocolate peanut butter shake

Well today I find myself out of raw treats....  so taking action!

I made carrot juice today with raspberries, and apples.

Then I made Chocolate peanut butter shake -  you would make this in a blender of sorts  (I have the ninja)
3 cups water
3 cups spinach greens
handful of raw almonds
2 T Cacao powder
1/2 cup dates
3 med bananas
1/4 cup oats
1/2 cup natural peanut butter
3 cups ice
You will want to blend hte water and greens first then add dates, and almonds, blend.  add remaining ingredients except ice and blend well.  Then add the ice and blend.. then enjoy! 
This is yummy and good for you!

Raw treats made today : Bit O honey bars (quick and easy!)
1/2 cup natural no sugar added peanut butter
1/2 cup raw honey
1 cup almonds
Blend almonds into a power in a blender or food processor.  Combine all 3 ingredients and stir until smooth.  Pour mixture on a long piece of parchment paper and put int eh freezer until hard.  Unwrap and cut into pieces and store in the fridge or freezer.  Delicious!

Almond joys
3 cups unsweetened coconut
1 1/2 cups almond flour (blended raw almonds to a powder)
1 cup pure maple wyrup
1/3 cup softened coconut oil
1 T vanilla power
1/2 t. sea salt
3 T poppy or chia seed
stir well combined and roll into balls on a pan
Chocolate sauce
3/4 c coconut oil
4 T cacao powder
1 tsp vanilla powder
1/4 cup pure maple syrup

stir until smooth drizzle over the almond joy balls, top with an almond and a little coconut and freeze until set. Enjoy!

Day 8

Today I had a migraine, and felt hungry all day for some reason.  Luckily I made a lot of yummy things today.  For lunch we had zucchini shredded warmed with tomato juice on top!
I also spend some time meditating.  

For dinner Lettuce wraps. 
I chopped up the veges and saute just a little on the stove with some olive oil on 1 or 2 temperature level because I still wanted it raw, I didn't let the temperature get over 120 degrees.
Celery 3 stalks, carrots 3, zucchini 3 small, onion  1 small one,
you can put mushrooms but I dont really care for them so I choose not to. 
Then I put cut ice-burg lettuce in half and used them as bowls for the wraps.
was so yummy! 

I also made raw granola bars-
6 cups oats
3 T. ground flax seed
1 cup honey
1/2 cup maple syrup
1/2 tsp vanilla powder  or 1 1/2 tsp liquid vanilla
1/2 cup coconut oil
1 1/4 cup Adams or raw peanut butter
2 T. chia seed, poppy seed

Stir all together and either roll into balls or press into a pan.  store in a fridge or the freezer.
I added a little coconut and raw chocolate chips. 

Thin mint brownies
1 cup walnuts
1/2 cup almonds
1 1/2 cup dates
1/2 tsp vanilla powder
1/4 cup cocoa powder
 1/8 cup pure maple syrup
a few drops peppermint oil
combine all ingredients using a food processor or blender

I also made frosting
1/2 cup cacao powder
1/4 cup pure maple syrup
1/4 cup honey
1/4 cup coconut oil
1/2 tsp chili powder
1/2 tsp cinnamon
stir all ingredients together and pour over brownies and chill for 1/2 hr or so.. cut into squares and enjoy!

Raw strawberry jam

Just finished making Raw strawberry jam. 
1 cup strawberries
1 teaspoon Lemon juice 
1 pinch Sea salt
sweetener to taste (honey, agave, stevia ect) 
Blended it in my Ninja blender.. so easy so yummy! 
Next is the chocolate dipped strawberries (in vegan chocolate)

Day 4/30 eating all raw foods

ok.. super excited right now! Day 4 of eating all raw foods and we went to the mall. At Rue 21 they had $10 cute capris so I bought a pair (one size too small) on purpose to help me with motivation to get healthy and such... Well I got home and tried them on and they already fit! Woot woot! Yup this girl is already down a pants size in 4 days of eating raw! I love it!

Day 6 eating raw food

Well, end of day 6 of eating raw.. I am loving the food, but realizing just how many emotions I had stored that are being released as well.. I am using all I have learned to heal emotionally during this physical cleanse as well. Almost 1 week down and 3 to go! Bailey has decided for his first non raw food he is having a baked potato... I haven't decided mine yet.. but Gingers Cafe in Springville is my new favorite restaurant. They have raw, vegan, and organic food that is very tasty!
