ok I will admit it, today was a little difficult. I keep seeing fabulous recipes on facebook and craving more salty foods. Guess I better get out the dehydrator and make some raw kale chips, crackers something..
I know it will be worth it.
I have received compliments on my skin, and "have you lost weight?" no actually haven't lost a pound; but have lost inches and feeling good. :)
I am really craving pancakes.. so I am on the search for any "raw pancakes"... looking at shantelles recipe I Posted here.. will see what else I can find... to put my raw strawberry jam on..

Wendys chili recipe.. vegan style!
1 quart tomato juice
1 (29-ounce) can tomato purée
1 (15-ounce) can red kidney beans, drained
1 (15-ounce) can pinto beans, drained
1 medium-large onion, chopped (about 1 1/2 cups)
1/2 cup diced celery
1/4 cup diced green bell pepper
1/4 cup chili powder (use less for milder chili)
1 teaspoon ground cumin (use more for real flavor)
1 1/2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/2 teaspoon agave or honey or stevia
1/8 teaspoon cayenne pepper
Instructions
Place all ingredients in a 6-quart pot. Cover the pot and let the chili simmer for 1 to 1 1/2 hours, stirring every 15 minutes. You can also cook this in a slow cooker on low for 3 to 4 hours.

Well today I find myself out of raw treats.... so taking action!
I made carrot juice today with raspberries, and apples.
Then I made Chocolate peanut butter shake - you would make this in a blender of sorts (I have the ninja)
3 cups water
3 cups spinach greens
handful of raw almonds
2 T Cacao powder
1/2 cup dates
3 med bananas
1/4 cup oats
1/2 cup natural peanut butter
3 cups ice
You will want to blend hte water and greens first then add dates, and almonds, blend. add remaining ingredients except ice and blend well. Then add the ice and blend.. then enjoy!
This is yummy and good for you!
Raw treats made today : Bit O honey bars (quick and easy!)
1/2 cup natural no sugar added peanut butter
1/2 cup raw honey
1 cup almonds
Blend almonds into a power in a blender or food processor. Combine all 3 ingredients and stir until smooth. Pour mixture on a long piece of parchment paper and put int eh freezer until hard. Unwrap and cut into pieces and store in the fridge or freezer. Delicious!
Almond joys
3 cups unsweetened coconut
1 1/2 cups almond flour (blended raw almonds to a powder)
1 cup pure maple wyrup
1/3 cup softened coconut oil
1 T vanilla power
1/2 t. sea salt
3 T poppy or chia seed
stir well combined and roll into balls on a pan
Chocolate sauce
3/4 c coconut oil
4 T cacao powder
1 tsp vanilla powder
1/4 cup pure maple syrup
stir until smooth drizzle over the almond joy balls, top with an almond and a little coconut and freeze until set. Enjoy!

Day 8
Today I had a migraine, and felt hungry all day for some reason. Luckily I made a lot of yummy things today. For lunch we had zucchini shredded warmed with tomato juice on top!
I also spend some time meditating.
For dinner Lettuce wraps.
I chopped up the veges and saute just a little on the stove with some olive oil on 1 or 2 temperature level because I still wanted it raw, I didn't let the temperature get over 120 degrees.
Celery 3 stalks, carrots 3, zucchini 3 small, onion 1 small one,
you can put mushrooms but I dont really care for them so I choose not to.
Then I put cut ice-burg lettuce in half and used them as bowls for the wraps.
was so yummy!
I also made raw granola bars-
6 cups oats
3 T. ground flax seed
1 cup honey
1/2 cup maple syrup
1/2 tsp vanilla powder or 1 1/2 tsp liquid vanilla
1/2 cup coconut oil
1 1/4 cup Adams or raw peanut butter
2 T. chia seed, poppy seed
Stir all together and either roll into balls or press into a pan. store in a fridge or the freezer.
I added a little coconut and raw chocolate chips.
Thin mint brownies
1 cup walnuts
1/2 cup almonds
1 1/2 cup dates
1/2 tsp vanilla powder
1/4 cup cocoa powder
1/8 cup pure maple syrup
a few drops peppermint oil
combine all ingredients using a food processor or blender
I also made frosting
1/2 cup cacao powder
1/4 cup pure maple syrup
1/4 cup honey
1/4 cup coconut oil
1/2 tsp chili powder
1/2 tsp cinnamon
stir all ingredients together and pour over brownies and chill for 1/2 hr or so.. cut into squares and enjoy!

I attended Yoga and raw breakfast with my good friend Cynthia Sumner today! This was my first attempt at yoga, except for a few poses on the Wii fit. It was amazing! Raw strawberry jam
Just finished making Raw strawberry jam.
1 cup strawberries
1 teaspoon Lemon juice
1 pinch Sea salt
sweetener to taste (honey, agave, stevia ect)
Blended it in my Ninja blender.. so easy so yummy!
Next is the chocolate dipped strawberries (in vegan chocolate)

Day 4/30 eating all raw foods
ok.. super excited right now! Day 4 of eating all raw foods and we went to the mall. At Rue 21 they had $10 cute capris so I bought a pair (one size too small) on purpose to help me with motivation to get healthy and such... Well I got home and tried them on and they already fit! Woot woot! Yup this girl is already down a pants size in 4 days of eating raw! I love it!

Day 6 eating raw food
Well, end of day 6 of eating raw.. I am loving the food, but realizing just how many emotions I had stored that are being released as well.. I am using all I have learned to heal emotionally during this physical cleanse as well. Almost 1 week down and 3 to go! Bailey has decided for his first non raw food he is having a baked potato... I haven't decided mine yet.. but Gingers Cafe in Springville is my new favorite restaurant. They have raw, vegan, and organic food that is very tasty!

I decided that since this journey to health is important to me I would blog it so I can share my experience with those who are also striving for heath in a physical, spiritual and mental aspect. I will be posting soem recipes, experiences and tips!
